Le Grand Contrôle’s Yule Log has arrived
Every year, this traditional Christmas dessert — known as the Bûche de Noël — is reimagined by pastry chefs and chocolatiers across France in an amazing display of ingenuity, skill, and flavour. This year, Le Grand Contrôle’s Pastry Chef, Aymeric Pinard, has once again created something exceptional...
A tasty tradition
Symbolising the wooden log burned in homes on Christmas Eve, the Yule Log was traditionally a sign of warmth in the home and hope for prosperity in the year to come. In the 18th century, the custom evolved into a dessert, typically made with a rolled sponge filled with cream and decorated to resemble the original — less tasty — Yule Log of bygone days.
Inspired by our illustrious neighbour...
Le Grand Contrôle’s unique location within the grounds of the Château de Versailles is an endless source of inspiration, and this year’s Bûche de Noël is no exception.
A meticulous reproduction of the Château itself, Chef Aymeric Pinard’s Yule Log is so beautiful, you may hesitate to cut into it. But those who do will be amply rewarded!
Flavours worthy of the Sun King himself
Beneath a royal exterior lies a delicate composition of flavours: a chestnut honey biscuit, wrapped in a honey mousse infused with beeswax, a citrus heart for a touch of freshness, pollen biscuit, and a propolis cream.
This bold and harmonious combination is inspired by the grand feasts served at the Court.
