Special creations for the season
This winter, don’t miss the chance to experience Chef Aymeric Pinard’s unique new creations.
First, the spectacular Bûche de Noël – the Yule Log – is a limited-edition masterpiece in chestnut honey biscuit, honey mousse and citrus. Inspired by the Château de Versailles itself, this year’s Bûche de Noël promises to bring a little wow to your festive celebrations.
Then in January, it’s time for the Galette des Rois, a traditional French creation made in celebration of the Epiphany. This year, expect an explosion of vanilla in every bite, where even the flour itself is infused with roasted vanilla for incomparable depth of flavour.

A tribute to this precious spice, every ingredient in Chef Aymeric Pinard’s Galette des Rois has been meticulously selected to offer an intense yet refined tasting experience. But what makes this Galette des Rois so delicious? The secret lies in a unique infusion process.
To create Chef Aymeric’s galette, even the flour has been infused with roasted vanilla, bringing an incomparable aromatic depth.
Panela sugar is infused with Madagascan vanilla to add a naturally fragrant sweetness, vanilla-infused almonds provide a subtly rich, vanilla-scented texture, and even the baking process is pure innovation — the galette is baked with vanilla pods in the oven, allowing the vanilla to reveal all its aromatic power.
