Flavours and surprising textures combine to make carefully selected ingredients even more sublime. In season, lamb is accompanied by aubergine confit, nori and samphire. Roast pigeon is enlivened with cherry pickles, the acidic note contrasting with a salsify gratin. Those with a smaller appetite might like to opt for one of the well-designed salads, such as an artichoke salad with anchovies or parmesan.
Desserts are created by Chef pâtissier and chocolate expert Cédric Rivière. Gourmets will lean towards his chocolate and pear several ways creation, while those looking for something lighter will love his sorbets and homemade ice creams.
