Nobu Matsuhisa, a visionary of Japanese-Peruvian fusion

Nobu Matsuhisa, a radiant figure of fusion cuisine, carries within him the meeting of two cultures that echo your own story. Affectionately known as “Nobu” or “Nobu San,” he reinvented Japanese gastronomy by blending it with the vibrant flavors of Peru.

His journey begins in South America, where ten years spent between Peru and Argentina shaped his perspective and awakened his taste for boldness.


In 1987, he set down his knives in Los Angeles and opened Matsuhisa, a discreet haven in Beverly Hills. There, his cuisine, as delicate as a stroke of Japanese ink and as radiant as the mountain ranges, captured the most sought-after tables and became Hollywood’s beloved address.

The Menu

At Matsuhisa Courchevel, the menu brings together contemporary Japanese cuisine and the Peruvian touches cherished by Chef Nobu Matsuhisa.

Classics are paired with bold creations, from Yellowtail Jalapeño to Salmon Karashi Su Miso, from Sashimi Tacos to Spicy Crispy Rice, not to mention the famous Black Cod Miso.

Delicately crafted sushi and sashimi, Robata-grilled dishes with enveloping aromas, light tempura, and homemade desserts create an experience that can be savored at one’s own pace.


To complement these moments, a selection of signature cocktails, as well as carefully chosen sakes and wines, extend the flavors and invite a harmonious tasting.
